Lupini Tini from Bar Bellamy

Ambient neighbourhood cocktail spot, Bar Bellamy, shares its signature Lupini Tini recipe.

The Lupini Tini is a variation of the popular Dirty Martini, which traditionally uses olive brine to add salinity and savoury depth. In our version, we incorporate the nutty, salty, pickled lupini bean both as a garnish and for the brine, complemented by a dash of MSG to amplify the savoury element. We wash our Never Never Triple Juniper Gin with olive oil to provide texture. This particular gin offers an intense juniper backbone necessary to complement the savoury nature of the lupini brine.

Ingredients

45 ml Olive Oil-washed Never Never Triple Juniper Gin

7.5 ml Dry Vermouth

7.5 ml Fino Sherry

1 barspoon (5 ml) Lupini Brine

2 dashes MSG solution

Method

Combine all ingredients in a chilled mixing glass and stir with ice. Strain into a chilled coupe and garnish with three brined lupini beans, leaving the shell intact. *Remember to remove the lupini bean from its shell before consuming. Oil & Gin

Mix Never Never Triple Juniper Gin and olive oil in a bag. Let it sit for 24 hours at room temperature. Then place in the freezer until the olive oil solidifies. Strain through filter paper, reserving both the infused gin and the oil. The oil can be repurposed to dress salads or as a marinade.

MSG crystals and water at a 1:50 ratio.
