A twist on the classic Old Fashioned, Apollo Inn’s Beekeeper cocktail uses whiskey and chamomile-infused honey for a floral, soothing finish. Perfect for winding down on cosy evenings.

Ingredients

Makes one Beekeeper

  • 60ml whiskey of your choice
  • 5ml Chamomile Vanilla Honey (see below)
  • 2 dashes of 10% salt solution (optional)
  • 3 dashes of orange bitters
  • Lemon twist

Chamomile Vanilla Honey
  • 500ml quality honey
  • 1 vanilla pod
  • 150ml chamomile tea, brewed and cooled (steep according to packet instructions)

Technique

To make the chamomile vanilla honey, scrape the seeds from the vanilla pod and place both seeds and pod in a small saucepan with the honey. Bring to a low simmer for 5 minutes. Remove from heat, add the cooled chamomile tea, and stir to combine.

To make the Beekeeper, pour all ingredients into a rocks glass, add a large ice cube, and stir for 10–15 seconds. Garnish with a lemon twist.

This drink is just as good topped with soda and lemon for a refreshing non-alcoholic option, or you can add a splash of whiskey for a highball-style serve.
