Low- and no-alcohol has been a focus of the Cutler & Co. cocktail program for many years, and it presents the opportunity to enjoy a cocktail as an aperitif before delving into the wine list.

There are lots of variations on the classic Negroni out there, but we love the signature character that Campari brings to the drink. Here, it’s blended with a lighter vermouth from the Savoie in France, rather than the darker, richer Piedmontese versions, and gin is substituted with Pearson’s Botanicals Rhubarb and Ginger, for complexity and spice. Stirred down, it’s a wonderfully light and bitter aperitif.

Ingredients

30ml Pearson’s Rhubarb and Ginger (or your favourite alcohol-free gin alternative)

30ml Dolin Rouge Vermouth

20ml Campari

Orange for the twist garnish

Equipment 

Bar spoon

Large old fashioned/rocks glass

Bar knife and board

Method

Cut a piece of orange rind for the twist, and set aside

Fill the glass with ice

Add Pearsons, Dolin and Campari

Stir for 10 seconds

Twist garnish over drink and rest on top of ice
